Every year I pull out my favorite fish recipes that I save for Lenten Friday meals. Here are my top 5 that I love. I know that your families will love them too!

LOS ANGELES, CA - Here are my top 5 favorite fish recipes that can be prepared in 30 min. or less.
Feel free to make them with your own special twist of flavors. Please share your thoughts, modifications, comments and how much your families love them. 

1 - Fish Tacos


INGREDIENTS (SERVES 6)

1⁄2 cup sour cream
1⁄2 cup mayonnaise
(Or 1 cup Crema Mexicana if you can find it) 
1⁄4 cup chopped fresh cilantro
1 package taco seasoning mix, divided
1 lb cod or any white fish fillets, cut into 1 inch pieces
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 (12 count) package taco shells, warmed or 1 (12 count) package flour tortillas

Toppings

avocado slices or guacamole
chopped onion
shredded cabbage
chopped tomato
lime juice
taco sauce

DIRECTIONS

Combine sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl. (sauce)

Combine fish, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet.

Cook, on medium-high heat, stirring constantly for 4 to 5 minutes, until cod flakes easily with a fork.

Fill taco shells with fish mixture

Top with sauce & toppings to taste

2 - Fish Chowder


INGREDIENTS (SERVES 4)

1 lb cod fish fillets
2 tablespoons margarine or 2 tablespoons cooking oil
1 medium onion, sliced
1⁄2 cup celery, diced
2 cups raw potatoes, diced
1⁄2 cup carrot, sliced
2 cups boiling water
1 teaspoon salt
1⁄2 teaspoon pepper
1 cup milk

DIRECTIONS

Cut cod fillets into bite sized pieces.
Melt margarine in large saucepan Cook onion and celery until onion is tender and translucent. Add
potatoes, carrots, water, salt and pepper.
Cover and simmer 10 to 15 minutes until vegetables are tender.
Add fish and cook 10 minutes longer.
Add milk.
Reheat, but do not boil.
Serve hot, with warm bread or rolls and butter.
3 - Mexicali Fish


INGREDIENTS (SERVES 6)
6 (4 ounce) red snapper fillets (may substitute tilapia or cod)1⁄2 cup flour4 tablespoons butter6 ounces green chili sauce (just buy it canned)3 ounces diced green chilies (just buy it canned)1 lb monterey jack and cheddar cheese blend (grated)3 tablespoons chopped cilantro leaves (garnish)salt (to taste)pepper (to taste)

DIRECTIONS

Preheat oven to 350.Coat fillets with flour seasoned with salt and pepper to taste.Heat butter in skillet and lightly sautee fillets in butter til done and flaky.Transfer fillets into individual casserole dishes or small oven proof bowls.Divide sauce and chilis among them evenly and then sprinkle cheese over each evenly.Bake for 15 minutes till cheese is nice and melted.Sprinkle with cilantro leaves.

Note: Try a layer of Spanish rice or orzo flavored with cumin in the bottom of the bowl before assembling. A one dish meal and easy clean up!

4 - Blackened Fish


INGREDIENTS (
SERVES 4)

4 red snapper fillets or 4 other firm fish (about 1 1/2 pounds raw fish)
1 teaspoon salt1 tablespoon garlic powder2 teaspoons dried thyme1 tablespoon dried parsley flakes1 tablespoon dried basil1 -2 teaspoon cayenne pepper (depending on how hot you want it)1⁄4 teaspoon fresh ground black pepper1 tablespoon olive oil

DIRECTIONS

Combine all spices/dry ingredients in a bowl and mix well.
Spread the spice mixture onto a flat plate.Press the fish fillets firmly into the spices, coating both sides.Heat the olive oil until almost smoking in a large heavy skillet.Cook the fish about 2 1/2 minutes on each side for fillets less than 3/4 inch thick.Increase time slightly for thicker fillets.

5 - Tuna Fish Casserole
 

INGREDIENTS (SERVES 6)

10 -16 ounces egg noodles1 (10 ounce) can cream of mushroom soup1 (10 ounce) can peas2 (6 ounce) cans tuna in water5 -6 ounces milk (1/2 of soup can)1 teaspoon butter, pat
Shredded cheese if desired

DIRECTIONS

Cook noodles al dente as per package directions.
Combine mushroom soup and milk in a 10 x 10 casserole dish ( or similar in size).Add in peas (drained).Add in tuna in water (drained).Mix gently as you do not want the tuna fish to mince. leave some chunks in there.Add in cooked noodles and blend well.Top with pat of butter.Microwave for 5 minute, stir, serve and enjoy.
